Just a quick lunch with rice and EGG STEW

Please follow the pictures below to see how l prepared my egg stew

Boil eggs and cut some slits on them
Season them with the spice of your choice l used curry powder and add oil, coat nicely
Heat oil in a pan preferably nonstick, toss your eggs for about 5 min then remove them from the pan
Add onions and garlic into the same pan we tossed eggs, and fry for abt 3min

Blend together, tomatoes, peppers, and parsley
Add it to the pan with onions and garlic and cook for 5min
Add salt and spices to the pan,l used turmeric, paprika, black pepper, garlic powder, oregano,garam masala

Add chicken stock
Add a tbsp of tomato paste, cover, and cook for about 10min on low heat

Add the eggs back, mix, and let it simmer uncovered for abt 3min
